Ingredients:
For the Poached Eggs:
- 4 large, fresh eggs
- 1 tablespoon white wine vinegar
- Salt to taste
For the Smashed Avocado:
- 1 ripe avocado, halved and pitted
- Juice of ½ lime
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Pinch of red pepper flakes (optional)
For the Toast and Tomatoes:
- 2 slices of sourdough bread (or your favorite bread)
- 1 cup vine-ripened cherry tomatoes
- 1 tablespoon olive oil
- Freshly cracked black pepper
Instructions:
1. Roast the Tomatoes:
- Preheat your oven to 400°F (200°C).
- Place the cherry tomatoes on a baking sheet, drizzle with olive oil, season with salt and pepper, and toss to coat.
- Roast for 10-15 minutes, or until slightly blistered and softened.
2. Prep the Avocado:
- Scoop the flesh of the avocado into a bowl.
- Add the lime juice, salt, pepper, and optional red pepper flakes.
- Mash the avocado with a fork until it reaches your desired consistency (chunky or smooth).
3. Toast the Bread:
- Toast your bread slices to your preferred level of doneness.
4. Poach the Eggs:
- Fill a medium saucepan with about 3 inches of water and bring to a simmer over medium heat.
- Add the white wine vinegar. The vinegar helps the egg whites set more quickly.
- Crack one egg into a small bowl or ramekin.
- Using a spoon, gently swirl the simmering water to create a whirlpool effect.
- Carefully slip the egg into the center of the whirlpool.
- Cook for 3-4 minutes, or until the whites are set and the yolks are still runny.
- Carefully remove the poached egg with a slotted spoon and set it on a paper towel to drain.
- Repeat the process with the remaining eggs.
5. Assemble the Dish:
- Spread the smashed avocado generously on the toasted bread slices.
- Top each toast with the roasted cherry tomatoes.
- Place a poached egg on top of each toast.
- Season with freshly cracked black pepper and a touch of salt if needed.
Tips:
- Use the freshest eggs possible for the best poached eggs.
- Don’t overcrowd the pan when poaching the eggs. You may need to do them in batches.
- For a creamier avocado, add a dollop of Greek Yogurt or sour cream to the mash.
- Garnish with fresh herbs like chopped chives or cilantro for added flavor.
