Ingredients
- 3 cups fresh pineapple chunks: (about 1 medium pineapple)
- 1 (14 ounce) can full-fat coconut milk: Creates the rich, creamy texture
- 1/4 cup packed fresh mint leaves
- 1-2 tablespoons honey or maple syrup: Adjust sweetness to your preference
- 1 tablespoon lime juice: Brings out the bright flavors
Equipment and Utensils
- Blender
- Popsicle molds
- Popsicle sticks
Instructions
1. Prep the pineapple
- Cut off the top and bottom of the pineapple.
- Stand it upright and carefully slice off the outer skin.
- Remove the eyes (the little brown spots) if desired.
- Cut the pineapple into quarters, then remove the tough core.
- Chop into smaller chunks.
2. Blend the ingredients
- Combine the pineapple chunks, coconut milk, mint leaves, honey/maple syrup, and lime juice in the blender.
- Blend until the mixture is completely smooth. Give it a taste test and add more sweetener if needed.
3. Fill the molds
- Carefully pour the mixture into your popsicle molds, leaving about 1/4 inch of space at the top for expansion during freezing.
- Insert the popsicle sticks according to your mold’s design.
4. Freeze!
- Place the molds in the freezer for at least 6 hours, or preferably overnight, until completely solid.
5. Unmold and enjoy
- To easily remove the popsicles, run the outside of the molds under warm water for a few seconds.
- Gently wiggle the popsicles to loosen them and enjoy the refreshing, tropical treat!
Tips
Fresh vs. frozen pineapple: Fresh pineapple will give the most vibrant flavor, but frozen pineapple chunks work too!
Coconut milk options: Use light coconut milk if you prefer a less rich popsicle.
Make it creamy: For an even creamier texture, try freezing a portion of the coconut milk to create little coconut milk “ice cubes” and blending them in.
