Ingredients:
- Large flour tortillas (4 for 4 burritos)
- Eggs (8 large)
- Breakfast sausage (1 lb ground)
- Frozen diced potatoes (2 cups)
- Shredded cheddar cheese (1 cup)
- Salt and black pepper (to taste)
- Cooking oil (vegetable or canola)
- Optional Toppings: Salsa, sour cream, guacamole, hot sauce
Instructions
Prep the fillings:
- Potatoes: Heat a tablespoon of cooking oil in a large skillet over medium heat. Add the frozen potatoes and cook until crispy and golden brown, stirring occasionally. Remove from the skillet and set aside.
- Sausage: In the same skillet, brown the breakfast sausage over medium heat, breaking it up with a spoon as it cooks. Drain off any excess grease and set aside.
- Eggs: In a medium bowl, whisk together the eggs with salt and pepper to taste.
Cook the eggs:
- Heat a teaspoon of cooking oil in the skillet over medium-low heat. Pour in the egg mixture and scramble gently until cooked through but still soft.
Warm the tortillas:
There are two ways to do this:
- Microwave: Wrap each tortilla in a slightly damp paper towel and heat for 10-15 seconds on high.
- Skillet: Heat a separate dry skillet over medium heat and warm each tortilla briefly on both sides until soft and pliable.
Assemble the burritos:
- Lay out a warmed tortilla. Arrange a portion of scrambled eggs, sausage, potatoes, and cheese down the center.
- Top with your desired optional toppings like salsa, sour cream, guacamole, or hot sauce.
- Fold the bottom of the tortilla up over the filling.
- Fold in both sides of the tortilla toward the middle.
- Continue rolling from the bottom, tucking as you go to keep the burrito secure.
Optional: Grill or brown the burritos:
- Heat the same skillet you used earlier over medium heat.
- Place the burritos, seam side down, in the skillet. Grill for 1-2 minutes per side or until they have a light golden-brown color and are slightly crispy.
Serve and Enjoy! Cut the burritos in half if desired and serve immediately.
Tips:
- Customize it: Feel free to add your favorite ingredients, such as onions, bell peppers, or different cheeses.
- Make ahead: You can prepare the fillings (potatoes, sausage, eggs) a day in advance and store them separately in the refrigerator. Assemble and warm the burritos right before serving.
- Freezing: Wrap fully assembled burritos tightly in foil and freeze. To reheat, thaw in the refrigerator overnight and bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until heated through.
