Potatoes:
- 2 pounds of small to medium waxy potatoes like Yukon Gold, Red Bliss, or new potatoes.
Olive oil:
- 2-3 tablespoons.
Seasonings:
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika (optional, can use smoked paprika)
Optional additions:
- Sliced onions
- Bell peppers (any color), sliced
- Mushrooms, sliced
- Fresh herbs like rosemary, thyme, or oregano.

Instructions
- Prep the potatoes: Wash and scrub the potatoes, then cut them into bite-sized pieces. Aim for roughly 1-inch cubes or wedges.
- Season the potatoes: In the large bowl, combine the potatoes with olive oil, salt, pepper, garlic powder, onion powder, and paprika (if using). Toss well to coat the potatoes evenly with the seasonings.
- Add optional ingredients: If you’re including onions, bell peppers, mushrooms, or fresh herbs, add them to the potato mixture and toss again.
- Create the foil packs: Cut large squares of heavy-duty aluminum foil (about 12×12 inches). Divide the potato mixture evenly between the squares – about 1 cup of potato mixture per pack usually works well.
- Seal the packs: Bring the edges of the foil together and fold them to create a tightly sealed packet. This prevents leaks and helps the potatoes steam.
- Grill: Preheat your grill to medium-high heat (around 400°F/200°C). Place the foil packs directly on the grill grates.
- Cook: Grill the potatoes for about 20-30 minutes, flipping the packets halfway through. Check for doneness by carefully piercing a potato piece with a fork – it should be easily tender.
- Serve: Open the packs carefully (steam will escape!). You can add toppings like: Shredded cheese (cheddar, Monterey Jack, etc.), Crumbled bacon, Sour cream, Chopped chives or green onions
Tips:
- Double the foil: If you’re worried about leaks, double-layer your foil squares for extra protection.
- Vary your seasonings: Get creative! Try Italian seasoning blends, Cajun seasoning, taco seasoning, or your favorite spice mixes.
- Oven method: You can make these in the oven too! Preheat the oven to 400°F (200°C) and bake for 35-45 minutes or until the potatoes are tender.
