Ingredients:
For the Crust:
- 2 cups gluten-free all-purpose flour blend (make sure it contains xanthan gum)
- 1 teaspoon active dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 cup warm water (about 110 degrees F)
- 2 tablespoons olive oil
- Cornmeal, for dusting
For the Toppings:
- 12 ounces ribeye steak, thinly sliced
- 1/2 cup olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large onion, sliced
- 8 ounces mushrooms, sliced
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese

Instructions:
Make the Crust:
- Combine dry ingredients: In a large mixing bowl, mix together the gluten-free flour, yeast, sugar, and salt.
- Add wet ingredients: Create a well in the center of dry ingredients. Add warm water and olive oil. Stir to combine until a dough ball forms.
- Knead the dough: On a lightly floured surface, knead the dough for 3-5 minutes until it’s smooth and elastic.
- Let it rise: Shape the dough into a ball, grease a bowl, place the dough in it, cover, and let it rise in a warm place for about 1 hour or until it has doubled in size.
Prepare the Toppings:
- Marinate the steak: Whisk together olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper in a medium bowl. Add steak slices and marinate for at least 15 minutes.
- Sauté the veggies: Heat a skillet over medium heat. Add a bit of olive oil, then cook onions and mushrooms until softened and slightly browned.
Assemble the Pizza:
- Preheat oven: Preheat oven to 450 degrees F (230 degrees C).
- Divide the dough: Punch down the risen dough and divide it in half.
- Roll and shape: On a lightly floured surface, roll each piece of dough into a 12-inch circle. Dust baking sheets or a pizza stone with cornmeal and place the dough rounds on them.
- Add toppings: Spread marinara sauce on each crust, leaving a small border. Top with the sautéed onions and mushrooms.
- Cook the steak: Heat a skillet and cook the marinated steak until browned, about 2-3 minutes per side. Arrange the steak pieces on top of the pizza.
- Add cheese: Sprinkle both pizzas with mozzarella cheese and Parmesan cheese.
Bake and Enjoy!
- Bake: Bake the pizzas for 15-20 minutes or until the crust is golden brown and cheese is melted and bubbly.
- Slice and serve: Let the pizzas cool for a few minutes, then slice and enjoy hot!
