Yields: 10-12 breadsticks
Prep Time: 30 minutes (including rising)
Cook Time: 15-20 minutes
Ingredients
For the Dough:
- 1 and 1/2 cups warm water (approximately 110°F/43°C)
- 1 tablespoon sugar
- 1 packet (2 and 1/4 teaspoon) active dry yeast
- 3 and 1/2 cups gluten-free 1-to-1 baking flour (like Bob’s Red Mill)
- 1 teaspoon xanthan gum (if your flour blend doesn’t include it)
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 2 tablespoons olive oil
For the Topping:
- 4 tablespoons butter, melted
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 cup shredded mozzarella cheese
- Grated Parmesan cheese (for serving)
- Marinara sauce (for dipping)
Instructions
Make the Dough:
- Activate the yeast: In a large mixing bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for 5-10 minutes until foamy.
- Mix dry ingredients: In a separate bowl, whisk together the gluten-free flour, xanthan gum (if needed), Italian seasoning, and salt.
- Combine wet and dry: Add the dry ingredients to the yeast mixture. Stir in the olive oil. Mix with a sturdy spoon or spatula until a sticky dough forms.
- Let it rise: Cover the bowl with plastic wrap or a damp kitchen towel and place it in a warm spot to rise for about 20 minutes, or until doubled in size.
Shape and Bake:
- Preheat oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Divide and shape: Lightly dust a work surface with gluten-free flour. Divide the dough into 10-12 pieces and shape them into long breadsticks (about 6-7 inches long).
- Prepare the topping: In a small bowl, combine the melted butter, garlic, oregano, garlic powder, and salt.
- Coat the breadsticks: Brush the breadsticks generously with the garlic butter mixture. Sprinkle mozzarella cheese over the top.
- Bake: Bake in the preheated oven for 15-20 minutes, or until golden brown and cooked through.
Serve and Enjoy!
- Optional: Sprinkle with freshly grated Parmesan cheese.
- Serve warm: Serve the breadsticks with warm marinara sauce for dipping.
Tips:
- Flour matters: Using a good quality gluten-free 1-to-1 flour blend specifically designed for bread-like recipes is important for structure and texture.
- Room temperature helps: Allowing ingredients like water and eggs to come to room temperature will aid in the yeast activation process.
- Don’t overbake: Check on your breadsticks at the earlier time range to prevent an overly dry texture.
- Flavor variations: Experiment with different herbs, spices, and your favorite pizza toppings!
