Ingredients
For the Dirt:
- 1 (14 ounce) package gluten-free chocolate sandwich cookies (like Kinnikinnick K-Toos or Glutino Oreos)
- 3 tablespoons dairy-free butter substitute (such as Earth Balance), melted
For the Pudding Filling:
- 1 (3.4 ounce) box instant vanilla pudding mix (make sure it’s dairy-free and gluten-free)
- 2 cups unsweetened dairy-free milk (almond, soy, coconut are all good options)
- 1 (8 ounce) container dairy-free whipped topping (such as So Delicious CocoWhip), thawed
Optional Decorations:
- Gummy worms
- Fresh mint leaves (for a fun, garden-themed look)
Instructions
Make the “Dirt”:
- Place the gluten-free sandwich cookies into a food processor and pulse until they are finely ground into crumbs.
- Add the melted dairy-free butter substitute and pulse a few more times to combine.
Make the Pudding Filling:
- In a large bowl, whisk together the instant vanilla pudding mix with the dairy-free milk for about two minutes or until thickened.
- Gently fold in the thawed dairy-free whipped topping until well-combined.
Assemble your Dirt Cake:
- Choose a serving vessel: you can use a large trifle bowl, individual serving cups, or even small terracotta flower pots for a whimsical look.
- Start layering: add a layer of the chocolate cookie crumbs to the bottom of your dish.
- Spoon a layer of the pudding filling on top of the crumbs.
- Repeat the layering process, ending with a final layer of chocolate “dirt”.
Decorate and Chill:
- Before serving, add some gummy worms “crawling” out of the dirt. You can even add some small mint leaves if desired.
- Cover and refrigerate the dirt cake for at least 2 hours, or ideally overnight, to allow the flavors to meld and the crumbs to soften.
Tips
