Ingredients
For the Fajita Filling
- 1 lb boneless, skinless chicken breasts or thighs (can substitute with steak or shrimp)
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 teaspoon fajita seasoning (store-bought or see ‘Tips’ below)
- Salt and pepper to taste
For the Caesar Dressing
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice or white wine vinegar
- 1-2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon anchovy paste (optional, provides traditional flavor)
- Salt and pepper to taste
For the Salad
- 2 hearts of romaine lettuce, chopped
- 1/2 cup shredded Parmesan cheese
- 1/2 cup croutons (store-bought or homemade)
- Optional: sliced avocado, cherry tomatoes
Instructions
1. Make the Fajita Filling
- Cut the chicken (or your chosen protein) into thin strips.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and season with fajita seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes per side.
- Remove and set aside.
- In the same skillet, add sliced onion and bell peppers. Cook, stirring occasionally for 5-7 minutes, until softened and slightly charred.
2. Make the Caesar Dressing
- Whisk together all dressing ingredients until smooth. Adjust seasoning to taste.
3. Assemble the Salad
- In a large bowl, combine chopped romaine lettuce with half of the Caesar dressing. Toss to coat.
- Top the lettuce with the cooked chicken, peppers, and onions. Sprinkle with shredded Parmesan cheese and croutons.
- Drizzle with the remaining Caesar dressing. Add optional toppings like avocado and tomatoes if desired.
- Serve immediately.
Tips
Homemade Fajita Seasoning: Combine 1 tbsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne pepper (optional), salt and pepper.
Vegetarian: Substitute tofu or a plant-based meat alternative for the chicken.
Adjust the Flavor: Increase the amount of garlic or anchovy paste for a more intense Caesar flavor. Feeling spicy? Add a diced jalapeño to your fajita mix.
Make-Ahead: The fajita filling and Caesar dressing can be made a day in advance and stored in the refrigerator.
