Easy Blondies Recipe

Ingredients:

  • 1 cup (2 sticks) unsalted butter, melted and slightly cooled
  • 1 3/4 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup mix-ins of your choice (chocolate chips, white chocolate chips, butterscotch chips, chopped nuts, etc.)

Instructions:

  • Prep work: Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper.
  • Wet ingredients: In a large bowl, whisk together the melted butter and brown sugar until smooth. Beat in the eggs one at a time, followed by the vanilla extract.
  • Dry ingredients: In a separate medium bowl, whisk together flour, baking powder, and salt.
  • Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t overmix!
  • Mix-ins: Gently fold in your desired mix-ins.
  • Bake: Pour the batter into your prepared pan, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
  • Cool & Enjoy: Let the blondies cool completely in the pan before cutting into squares and serving.

Tips for the best blondies:

  • For extra richness: Consider browning your butter before adding it to the recipe. This adds a delicious nutty flavor.
  • Room temperature ingredients: Using room temperature ingredients helps them mix together more easily.
  • Don’t overbake: Blondies will continue to firm up a bit as they cool, so pull them out of the oven when they’re still slightly gooey in the center.
  • Customize: Get creative with your mix-ins! Try combinations like peanut butter chips and chopped pretzels, toffee bits and pecans, or even dried fruit and white chocolate chips.
