Chips:
- Large bag of thick-cut restaurant-style tortilla chips
Ground Beef Mixture:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) refried beans
Cheese Sauce:
- 1 block (8oz) Velveeta cheese, cut into cubes
- 1 can (10 oz) Rotel diced tomatoes & green chilies
Toppings:
- 1-2 cups shredded cheddar cheese
- 1/2 cup chopped tomato
- 1/4 cup sliced jalapeños
- 1/4 cup diced onion
- 1/4 cup sliced black olives
- Sour cream
- Your favorite hot sauce (optional)
Instructions:
Make the Cheese Sauce:
- Combine the Velveeta cheese cubes and Rotel in a medium saucepan over low heat.
- Stir continuously until the cheese is fully melted and the sauce is smooth.
Prepare the Beef:
- Brown the ground beef in a large skillet over medium heat. Drain off any excess grease.
- Stir in the taco seasoning according to package instructions.
- Add the refried beans and heat through, stirring to combine with the meat.
Assemble the Nachos:
- Preheat your oven to 350°F (175°C).
- Spread a generous layer of tortilla chips on a large baking sheet or oven-safe platter.
- Top with a thick layer of the ground beef and bean mixture.
- Ladle the warm cheese sauce over the beef.
- Sprinkle a generous amount of shredded cheddar cheese on top.
Bake and Finish:
- Bake the nachos in the preheated oven for 10-15 minutes, or until the cheese is completely melted and bubbly.
- Top with chopped tomatoes, sliced jalapeños, diced onion, and sliced black olives.
- Add dollops of sour cream and a drizzle of your favorite hot sauce, if desired.
