Instructions:
Warm the Tortillas: Heat tortillas in one of the following ways:
- Microwave: For 15-20 seconds, until soft and pliable.
- Skillet: Lightly heat on a dry skillet for a few seconds per side.
- Oven: Wrap a stack of tortillas in foil, warm in a 350°F (175°C) oven for 5-10 minutes.
Make the Refried Beans (if making your own):
Ingredients:
- 1 tablespoon olive oil
- ½ cup chopped onion
- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ¼ teaspoon garlic powder
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pan. Add onions, cook until softened.
- Add beans, spices, and a splash of water. Simmer for 5 minutes, mashing beans slightly.
Assemble the Burritos:
- Lay out a warm tortilla.
- Spread ¼ cup refried beans down the center.
- Top the beans with a generous spoonful of Del Taco-style red sauce.
- Sprinkle on ¼ cup of cheddar cheese.
- Add onions or your favorite toppings (optional).
Fold the Burritos:
- Fold the sides of the tortilla towards the center.
- Starting at the bottom, tightly roll the tortilla upwards, tucking the sides in as you go.
Optional: Get Crispy:
- Pan-fry: Lightly sear burritos in a skillet for a minute per side for a slightly crispy texture.
- Bake: Place in a 375°F (190°C) oven on a baking sheet for 5-8 minutes to melt cheese and warm through.

Del Taco-Style Red Sauce:
Ingredients:
- 1 tablespoon olive oil
- 1 tablespoon all-purpose flour
- 1 cup tomato sauce
- ½ cup water (or beef/vegetable broth for more flavor)
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pan. Add flour and whisk for about a minute until lightly browned.
- Gradually whisk in tomato sauce and water (or broth).
- Add spices, season to taste, and simmer for a few minutes until thickened.
