- 1 pound boneless, skinless chicken breast, cut into bite-sized cubes
- 1/4 cup peanut sauce (from the prepared sauce above)
Pizza:
- 1 pound store-bought pizza dough (or your favorite homemade recipe)
- Cornmeal (for dusting)
- 2 cups shredded mozzarella cheese
- 1/2 cup shredded carrots
- 1/2 cup bean sprouts
- 4 green onions, thinly sliced
- 1/4 cup chopped roasted peanuts
- 2 tablespoons chopped fresh cilantro
Instructions
1. Make the Peanut Sauce:
- In a medium bowl, whisk together all peanut sauce ingredients.
- Adjust the amount of water to achieve your desired consistency.
- Set aside.
2. Prepare the Thai Chicken
- Heat olive oil in a large skillet over medium-high heat.
- Add cubed chicken and cook until browned and cooked through.
- Remove chicken from the skillet. Add 1/4 cup of the peanut sauce and toss chicken to coat.
3. Assemble the Pizza:
- Preheat oven to 450°F (230°C). Prepare a baking sheet or pizza stone with a light dusting of cornmeal.
- Roll out or stretch your pizza dough to your desired size and thickness. Place on the prepared baking surface.
- Spread a thin layer of peanut sauce over the dough, leaving a slight border for the crust.
- Top with an even layer of mozzarella cheese.
- Distribute the Thai chicken, carrots, bean sprouts, and green onions over the cheese.
- Sprinkle with chopped peanuts.
4. Bake the Pizza:
- Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
5. Garnish and Serve:
- Remove pizza from the oven and sprinkle with fresh cilantro.
- Slice and serve immediately.
