Ingredients:
For the Chicken:
- 1 lb boneless, skinless chicken breast
- Salt and pepper
- 1/4 cup + 2 tablespoons BBQ sauce (your favorite kind)
For the Pizza:
- 1 lb pizza dough (store-bought or homemade)
- Olive oil
- 1/2 cup BBQ sauce
- 1 cup shredded smoked gouda cheese
- 1 cup shredded mozzarella cheese
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
Instructions:
Prepare the Chicken:
- Preheat oven to 400°F (200°C).
- Season chicken breasts with salt and pepper.
- Place chicken in a baking dish and brush with 2 tablespoons of BBQ sauce.
- Bake for 20-25 minutes, or until cooked through. Let cool slightly, then dice or shred into bite-sized pieces.
Assemble the Pizza:
- Preheat oven to its highest setting (500°F/260°C or higher if possible). Place a pizza stone or baking sheet in the oven to preheat as well.
- Let the pizza dough come to room temperature for easier handling.
- On a lightly floured surface, stretch or roll the dough into a 12-inch circle.
- Drizzle a bit of olive oil over the dough, then spread the 1/2 cup BBQ sauce evenly, leaving a small border.
- Sprinkle on half of the smoked gouda, then half of the mozzarella cheese.
- Top with the cooked chicken, then the thinly sliced red onion.
- Finish with the remaining mozzarella and smoked gouda.
Bake and Finish:
- Carefully transfer the pizza to your preheated pizza stone or baking sheet.
- Bake for 10-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes.
- Garnish with chopped fresh cilantro, slice, and enjoy!
