Ingredients:
- 9 cups gluten-free Chex cereal (Rice Chex is the classic choice)
- 1 cup semi-sweet chocolate chips (Choose a gluten-free brand like Enjoy Life)
- 1/2 cup white chocolate chips
- 3 tablespoons coconut oil (Refined is best for no coconut taste)
- 1 teaspoon peppermint extract
- 1 1/2 cups powdered sugar
- 1/2 cup crushed candy canes

Instructions
- Prep work: Crush your candy canes. You can put them in a bag and crush with a rolling pin or use a food processor. Set aside.
- Large mixing: Add your Chex cereal to a very large bowl.
- Melt the chocolate: In your microwave-safe bowl, combine the semi-sweet chocolate chips, white chocolate chips, and coconut oil. Microwave in 30-second intervals, stirring thoroughly between each interval, until completely melted and smooth.
- Flavor time: Add the peppermint extract to the melted chocolate mix and stir well.
- Coat the cereal: Carefully pour the melted chocolate mixture over the Chex cereal. Gently fold to ensure all the cereal pieces are evenly coated.
- Candy cane toss: Add about 2/3 of the crushed candy canes and stir in gently.
- Powdered Sugar Magic: Carefully pour the chocolate-covered cereal into a large resealable bag. Add the powdered sugar, seal the bag securely, and shake vigorously until all pieces are coated.
- Cool Down: Spread the coated puppy chow onto parchment or wax paper. Sprinkle with the remaining crushed candy canes. Allow to set for at least 30 minutes.
- Enjoy: Once the chocolate has set, your Chocolate-Peppermint Puppy Chow is ready! Store in an airtight container for maximum freshness.
