Ingredients
Chicken
- 1 lb boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon paprika (optional)
Base
- 4 cups cooked grain (brown rice, quinoa, couscous, or your choice)
- 4 cups baby spinach or mixed greens
Toppings (choose your favorites)
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup cooked chickpeas (canned is fine, just rinse off)
- 1/4 cup crumbled feta cheese
- 1/4 cup Kalamata olives
- 1 avocado sliced
- Other ideas: shredded carrots, bell pepper strips, sunflower seeds, red onion
Dressing
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Cook the chicken
- Preheat oven to 400 degrees F (200 degrees C).
- Pat chicken dry and season with olive oil, salt, pepper, and optional spices.
- Bake for 20-25 minutes (depending on thickness) or until cooked through (internal temp of 165 degrees F). You can also grill or pan-fry the chicken.
- Let cool slightly, then slice or dice.
2. Prepare the base
- Divide the cooked grain of your choice and the greens between four bowls.
3. Assemble your bowls
- Arrange the cooked chicken over the base in each bowl.
- Choose your desired toppings and add them attractively to the bowls.
4. Make the dressing
- Whisk together all dressing ingredients in a small bowl or shake well in a sealed jar.
5. Serve
- Drizzle your desired amount of dressing over each bowl and enjoy immediately!
