Ingredients
For the chicken patties
- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1 tablespoon fajita seasoning
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, lightly beaten
For the fajita vegetables
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 1/2 teaspoon fajita seasoning
- Salt and pepper to taste
Toppings and assembly
- 4 hamburger buns
- 4 slices Monterey Jack or pepper jack cheese
- Guacamole (homemade or store-bought)
- Sour cream (optional)
- Salsa (optional)
- Other desired toppings (lettuce, tomato, etc.)
Instructions
1. Make the guacamole (if making homemade): In a bowl, mash together 2 ripe avocados, the juice of half a lime, 1 minced garlic clove, and salt to taste. Set aside.
2. Prepare the chicken patties: In a large bowl, combine ground chicken, breadcrumbs, fajita seasoning, cumin, garlic powder, chili powder, salt, pepper, and egg. Mix gently until just combined (do not overmix). Form into four equal-sized patties.
3. Cook the fajita vegetables: Heat olive oil in a large skillet over medium-high heat. Add bell peppers and onions. Season with fajita seasoning, salt, and pepper. Cook, stirring occasionally until softened and lightly browned, about 5-7 minutes. Remove from skillet and set aside.
4. Cook the chicken patties: In the same skillet, cook chicken patties over medium-high heat for 5-6 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C). During the last minute of cooking, top each patty with a slice of cheese.
5. Toast the buns (optional): Lightly toast your hamburger buns if desired.
6. Assemble the burgers: On the bottom bun, place a chicken patty, a generous scoop of fajita vegetables, a dollop of guacamole, and any additional desired toppings. Add the top bun and enjoy!
Tips
Don’t overcook the chicken: The patties can dry out, so cook them just until they’re cooked through.
Spice it up: Add a pinch of cayenne pepper or a sliced jalapeño to the chicken mixture or vegetables for extra heat.
Get creative with toppings: Sliced avocado, pickled jalapenos, and fresh cilantro are all delicious additions.
