Ingredients

- 2 cups shredded cheddar cheese

Instructions
- Preheat oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Brown the sausage: In a large skillet over medium-high heat, brown the sausage, breaking it up with a spoon as it cooks. Drain off any excess grease.
- Sauté vegetables: Add the olive oil to the skillet. Add the onion and bell pepper and cook until softened, about 5 minutes. Add the frozen mixed vegetables, garlic, oregano, salt, and pepper. Cook for another 2-3 minutes, until the vegetables begin to thaw.
- Combine the sauce: Stir in the diced tomatoes, cream of mushroom soup, and chicken broth. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally.
- Add the rice: Stir in the uncooked rice and remove from heat.
- Assemble the casserole: Transfer the mixture to the prepared baking dish. Sprinkle evenly with the cheddar cheese.
- Bake: Cover the dish with foil and bake for 30 minutes. Uncover and bake for an additional 5-10 minutes, or until cheese is melted and bubbly and the rice is tender.
- Rest and serve: Let the casserole stand for 5 minutes before serving.
