Ingredients
For the Cajun Chicken
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning (store-bought or homemade – see note below)
For the Mardi Gras Salsa
- 1 (15 ounce) can diced pineapple, drained
- 1/2 cup diced red onion
- 1/2 cup diced green bell pepper
- 1 jalapeno pepper, seeded and finely diced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Make the Mardi Gras Salsa
- Combine ingredients: In a medium bowl, combine diced pineapple, red onion, green bell pepper, jalapeno, cilantro, lime juice, salt, and pepper.
- Mix and chill: Stir well to combine all the ingredients. Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
2. Make the Cajun Chicken
- Preheat skillet: Heat a large skillet or grill pan over medium-high heat.
- Prep the chicken: Brush chicken breasts with olive oil and season generously on both sides with Cajun seasoning.
- Cook the chicken: Cook chicken for 6-8 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C).
- Let it rest: Remove the chicken from the skillet and allow it to rest for 5 minutes before slicing.
3. Assemble and Serve
- Slice the chicken: Cut the chicken into strips or leave whole.
- Top with salsa: Serve the chicken warm, topped with a generous helping of Mardi Gras Salsa.
Notes
Homemade Cajun Seasoning: If you want to make your own, combine paprika, salt, garlic powder, black pepper, onion powder, cayenne pepper, dried oregano, and dried thyme.
Spice Adjustment: For a spicier salsa, keep some of the seeds from the jalapeno. For a milder version, omit it completely.
