Instructions:
Prep the bread:
- If your bread isn’t already stale, cut it into cubes and leave it out overnight or toast it lightly in the oven to dry it out.
Sauté the vegetables:
- Melt the butter in a large skillet over medium heat.
- Add the onions, garlic, celery, and carrots. Sauté for 5-7 minutes, or until the vegetables are softened and translucent.
- Add the mushrooms, sage, and rosemary. Cook for another 5-7 minutes, or until the mushrooms have released their liquid and are soft.
Combine ingredients:
- In a large mixing bowl, combine the sautéed vegetables, bread cubes, parsley, salt, and pepper.
- In a separate bowl, whisk together the chicken broth and eggs.
- Pour the broth mixture over the bread and vegetables. Mix gently until the bread is evenly coated.
Chill (optional):
- For optimal flavor absorption, cover the bowl and refrigerate the stuffing for at least 30 minutes or up to overnight.
Bake:
- Preheat your oven to 375 degrees F (190 degrees C).
- Grease a 9×13 inch baking dish.
- Transfer the stuffing mixture to the baking dish. Cover with foil.
- Bake for 30 minutes, then remove the foil and bake for another 15-20 minutes, or until golden brown and heated through.
