Ingredients
For the ground beef
- 1 tbsp olive oil
- 1 lb lean ground beef
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 2-3 tbsp homemade taco seasoning (recipe below) or store-bought low-carb variety
- 1/4 cup beef broth or water
For the cauliflower rice
- 1 medium head cauliflower, riced OR 1 bag pre-riced cauliflower
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Optional toppings
- Shredded lettuce
- Shredded cheese (cheddar, Monterey Jack, etc.)
- Salsa
- Guacamole or sliced avocado
- Sour cream
- Chopped cilantro
- Lime wedges
- Diced tomatoes
- Hot sauce for some kick
Instructions
Make the taco seasoning (if making homemade): In a small bowl, combine 2 tbsp chili powder, 1 tbsp cumin, 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp oregano, 1/2 tsp salt, and 1/4 tsp black pepper.
Prep the cauliflower rice (if using fresh)
- Remove leaves and tough stem from the cauliflower.
- Cut into florets and pulse in a food processor until it resembles a rice-like texture.
Cook the beef
- Heat olive oil in a large skillet over medium-high heat. Add onion and cook until softened (about 3 minutes).
- Add garlic and cook another minute until fragrant.
- Push onion and garlic to the side, and add the ground beef. Brown the beef, breaking it up with a spoon. Drain off any excess grease if needed.
- Stir in the taco seasoning and beef broth/water. Simmer for 5 minutes, or until the liquid is mostly absorbed.
Cook the cauliflower rice: In a separate skillet, heat olive oil over medium heat. Add riced cauliflower, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until tender.
Assemble bowls: Divide cauliflower rice among bowls. Top with the seasoned ground beef, and add your favorite toppings. Serve immediately.
Tips
- Customize it: Swap out ground beef for ground turkey or chicken, or try a vegetarian option with crumbled tempeh or seasoned lentils.
- Adjust the heat: Add more chili powder, cayenne pepper, or your favorite hot sauce for extra spice.
- Meal prep: Make a big batch of cooked ground beef and cauliflower rice at the beginning of the week for easy taco bowls throughout the week.
- Lettuce cups: For even lower carb, use lettuce leaves as taco “shell” instead of bowls.
