Instructions
Cook the chicken:
- Preheat a skillet or grill pan over medium-high heat.
- Season chicken with salt, pepper, garlic powder, and onion powder.
- Add olive oil to the pan and cook chicken for 5-7 minutes per side, or until cooked through (internal temperature reaches 165°F).
- Let the chicken rest for a few minutes, then shred it using two forks.
- Toss the shredded chicken with the BBQ sauce.
Assemble the quesadillas:
- Heat a large skillet or griddle over medium heat.
- Place one tortilla in the pan. Sprinkle a generous layer of cheese over half of the tortilla.
- Top the cheese with a portion of the BBQ chicken, and add red onion and cilantro if desired. Add another light layer of cheese on top.
- Fold the empty half of the tortilla over the filling.
Cook the quesadillas:
