Instructions
1. Prep the filling
- Heat the olive oil in a medium skillet over medium heat.
- Add the shredded chicken and BBQ sauce. Stir to coat and heat through, about 2-3 minutes. Remove from heat.
2. Assemble
- Heat a large skillet or griddle over medium heat. Lightly grease with cooking spray or butter.
- Place a tortilla on the heated skillet.
- Sprinkle ¼ cup of the cheddar cheese onto half of the tortilla.
- Top with ¼ of the chicken mixture, spreading evenly.
- Add ¼ of the apple slices and ¼ of the crumbled bacon.
- Sprinkle with another ¼ cup of cheddar cheese.
3. Cook the quesadillas
- Fold the empty half of the tortilla over the filling.
- Cook for 2-3 minutes per side, or until golden brown and the cheese is melted. Gently press with a spatula to help seal.
- Repeat with the remaining tortillas and fillings.
4. Serve
- Cut each quesadilla into wedges.
- Serve immediately with your favorite toppings like sour cream, salsa, guacamole, or chopped cilantro.
