- 4 large eggs
- 1/4 cup crumbled feta cheese (optional)

Instructions:
- Preheat & Prep: Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish (8×8 inch or similar) or individual ramekins.
- Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes. Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.
- Wilt the Spinach: Add the spinach to the skillet and cook, stirring frequently, until it wilts down, approximately 1-2 minutes.
- Flavor Base: Stir in the diced tomatoes (with their juices), oregano, salt, and pepper. Bring the mixture to a simmer, then reduce heat and cook for about 5 minutes to allow the flavors to meld.
- Transfer and Create Egg Wells: Carefully pour the tomato and spinach mixture into your prepared baking dish. Using the back of a spoon, create four indentations in the mixture – these will be the spots for your eggs.
- Crack the Eggs: Gently crack one egg into each indentation. Try to keep the yolks intact.
- Optional Cheese: Sprinkle the crumbled feta cheese evenly over the dish, if using.
- Bake: Place the baking dish in the preheated oven. Bake for 12-15 minutes, or until the whites are set but the yolks are still runny. Baking time may slightly vary depending on your oven and if you use ramekins.
- Garnish and Serve: Let the dish rest for a few minutes before serving. Garnish with fresh herbs if desired. Enjoy with crusty bread for dipping into the delicious sauce and yolks!

- Sauté Shortcut: If you’re short on time, you can skip the sautéing and simply combine all ingredients (except eggs and cheese) in the baking dish. The spinach will cook in the oven.
