Yields: 1 serving
Prep time: 5 minutes
Ingredients:
- 1 large flour tortilla: You can use whole wheat, spinach, or your favorite variety.
- 3 tablespoons hummus: Choose your favorite flavor – roasted red pepper, garlic, or traditional.
- 3-4 slices deli turkey: Opt for low-sodium for a healthier option.
- 1/4 cup sliced cucumber: Adds a refreshing crunch.
- 1/4 cup sliced tomato: Provides sweetness and juiciness.
- 1-2 tablespoons crumbled feta cheese: (optional, but adds a tangy, salty kick)
- 1 tablespoon chopped kalamata olives: (optional, for extra Mediterranean flavor)
- Handful of fresh spinach or baby greens (optional, for a boost of nutrients)
Instructions:
Prep your ingredients: Wash and slice the cucumber and tomato if needed.
Assemble the wrap: Lay the tortilla flat on a clean surface. Spread the hummus evenly over the tortilla, leaving about a ½ inch border around the edges.
Layer the fillings: Place the turkey, cucumbers, tomatoes, feta cheese (if using), kalamata olives (if using), and spinach (if using) in the center of the tortilla.
Roll the wrap: Fold the bottom of the tortilla up towards the center. Then fold in the left and right sides. Continue rolling the tortilla tightly from the bottom until you have a closed wrap.
Slice and serve: Cut the wrap in half diagonally for easy eating. Enjoy immediately.
Tips:
- Get creative: Add other Mediterranean-inspired ingredients like red onion, bell peppers, or artichoke hearts.
- Warm it up: If you prefer a warm wrap, toast the tortilla lightly in a pan or on a griddle before assembling.
- Meal Prep: Make multiple wraps ahead of time and store them in the refrigerator for grab-and-go lunches throughout the week.
