Ingredients
- 1 cup long-grain white rice
- 2 1/2 cups chicken broth (or vegetable broth for vegetarian option)
- 6 ounces broccoli, chopped into small florets
- 8 ounces ham steak, chopped into bite-sized pieces
- 6 ounces freshly shredded sharp cheddar cheese (avoid pre-grated for best melting)
Instructions
Cook the Rice and Broccoli: In a large skillet or saucepan over medium heat, combine the rice with chicken broth. Bring the mixture to a simmer. Reduce the heat to low and cover the skillet with a lid. Allow the rice to cook for approximately 6 minutes. Add the chopped broccoli florets, replace the lid, and cook for another 9-10 minutes, or until both the rice and broccoli are tender.
Melt the Cheese: Remove the lid and stir in the freshly shredded cheddar cheese until it melts and creates a creamy sauce.
Incorporate the Ham: Add your chopped ham to the pan. Stir until the ham is fully heated through.
Season and Serve: Give it a taste and adjust salt and pepper if desired. Serve immediately while warm and enjoy!
Helpful Tips
- Swap the Ham: Use diced leftover ham, rotisserie chicken, or cooked sausage for variations.
- Customize with Veggies: Add other vegetables like chopped onion, bell pepper, or mushrooms if you like. Sauté them briefly before adding the rice.
- Get Cheesy: Experiment with different cheese varieties like mozzarella, Colby Jack, or a blend of your favorites.
